The map is misleading. Most of the Roman empire not conquered by the arabs (North Africa, Levant, and Iberia) was Christian since 391 - https://en.wikipedia.org/wiki/Persecution_of_pagans_under_Theodosius_I#Theodosian_decrees_(389%E2%80%93391) The map also shows territories conquered by the Ottomans and Arabs as being islamic, which is not true - https://en.wikipedia.org/wiki/Jizya#Ottoman_Empire
