Ashkenazi Jews were forced to take on European surnames. Some like Napoleon demanded cultural assimilation, other countries did it to humiliate. Before then, Jews had Jewish surnames 'bar' or 'bat' (Hebrew for son or daughter of) then their parents name. I.e.
